Cupcake Recipe

As promised some time ago - these have proved faultless!


Cupcakes (in muffin cases!)


110g plain flour
140g golden castor sugar
1 large egg
120 ml milk
40g butter (v soft)
1 1/2 tsps baking powder

Add all dry ingedients to a bowl and the butter and whisk with hand mixer until it looks like crumbs. Then beat the egg and milk together and slowly add to the dry crumb mixture beating for no more than 2 mins until smooth. Put spoons of mixture into 12 muffin cases and bake for about 20 mins at 170 degrees or until golden an springy to touch.

Decorate to your hearts content with icing or butter icing. I did whole batches at Easter with mini eggs on top and mental pink ones for a girly night in last week! Let me know waht you think!
