Food (in general)

It seems food is the thing that most people love talking about and it is certainly at the very heart of my family and business! It has played a particularly prominent role over the last week too....I attended a celebration lunch for a local, award winning bistro, 99 Station St, Burton, who have been open for 2 years and have a passion for all food local and home grown - delicious and Staffordshire! I also have had increasing requests from guests and others for home cooked food for their holidays and special days. Although not a catering company, we do offer a home cooked dishes to be at Rowan House when guests arrive which can be ordered from our menu. Anyway I thought I would share a few...

Vegetarian Bean Chilli

2 onions chopped
a carrot
2 cloves garlic
a stick celery
1 tin of kidney beans
1 tin black eyed beans
about 1lb 1/2 of mixed veg chopped (whatever you fancy/in season e.g potato, courgette, peppers, aubergine)
2 tsps cumin seeds
tsp nutmeg
a couple of dried chillies finely chopped
salt and pepper
1 tbsp tomato paste
1 tin of chopped toms
good squeeze lemon or lime juice
chopped coriander

Add the onion, carrot and celery and garlic to some olive oil in a large pan or casserole and fry for a couple of mins. Add the cumin seeds and chilli and repeat. Then add the tomato puree and cook through to take away any bitter taste. Add the chopped mixed veg and beans and stir through so that they are coated in the onion mixture. Add the chopped tomatoes and season well plus the nutmeg. Bring to the boil and then simmer or put into a middling oven for 40-50 mins until all delicious. Feel free to add some water during cooking if looking a bit dry for your tastes. Add the lemon juice and a smattering of chopped coriander before serving with all your fave trimmings.
