More Staffordshire Food...


After such a lovely response yesterday to Tunstall Soup, I thought I'd offer a pudding today. This is definately an odd one and I have to admit that I haven't tried it yet - but would love to hear from someone who does or has! Here it is...


Madeley Pudding

Serves 4-6

10 salted crackers (e.g.TUC)

4 ozs dates

2 ozs walnuts

6 ozs caster sugar

3 egg whites

1 tsp almond essence


Beat egg whites stiffly, add sugar and a pinch of salt. Crush the crackers, chop dates and walnuts and fold into egg whites with the almond essence. Spread on a well greased oven proof plate and bake in the oven at 170 for 25 minutes until pale golden brown. When cold spread with lightly whipped cream and sprinkle with grated chocolate. Enjoy!
