As promised, I am posting a recipe I found in a fab old book called "Secrets of the Staffordshire Cook" - published and sold in aid of the Soldiers' Sailors' and Airmen's Families Association and the Queen's Silver Jubilee Appeal! All the recipes were donated by local Staffordshire people to help raise money and its forward includes the following..."Staffordshire is a very much maligned county with great contrasts of industrial complexes and large areas of totally unspoilt countryside" - how true!
Anyway thought the first recipe ought to be something summery as we are all enjoying the first signs of summer.
Tunstall Cucumber Soup!
3/4 pint of chicken stock
1/4 pint of passata
1/4 pint single cream
2 ozs prawns
1 chopped hard boiled egg
lots chopped herbs - e.g. chives, parsley, tarragon
Chop cucumber into tiny cubes. Mix everything together, liquidising some of the prawns and leaving some whole. Chill and serve with sprig of herbs on top.
