Banana Cake!

The age old question - what do you do with 3 manky black bananas after the kids have decided that they no longer eat them? Well this was passed to me by my sister and I made it yesterday. What a success and the non banana eating crowd wolfed it down and had seconds!

Banana Cake

9 oz self raising flour
10oz sugar
4oz of soft butter
3 ripe bananas
2 large eggs
1/2 tsp salt
1 tsp vanilla essence
1/2 tsp bicarb of soda

Mix all the ingredients together - I use electric hand whisk and do dry stuff and butter first then eggs last, then fold in mashed up bananas. Use 2 grease and bottom lined round tins and bake in a 180 oven for 25 -30 minutes. Once cooked and cooled fill with jam and serve. The perfect jam is home made plum but strawberry or blackcurrent work well too.
